Easy Herb Roasted Potatoes

  • 1/8 cup olive oil
I also had a random single sweet potato which I peeled and cubed to mix in with the russet potatoes.

In a large bowl, combine oil, garlic, basil, marjoram, dill weed, thyme, oregano, parsley, red pepper flakes, and salt.  Add potatoes and toss to coat.   Place potatoes in a single layer on a roasting pan or baking sheet.


Roast for 20 to 30 minutes in the preheated oven, turning occasionally to brown on all sides.


Simple and delicious!  A hit with the entire family!
The addition of the sweet potato was wonderful.  I will definitely make them that way again.

  1. I adore herb roasted potatoes and fall/root veggie mixes. I have never thought to try adding sweet potatoes to a russet mix, I will give that a try. Plus I love that you added dill.
